At Nico’s Trattoria, we live by the motto “Make pasta, make friends,” and that is the
atmosphere you’ll experience during our workshops.
In this workshop, we’ll prepare two kinds of pasta together: Ravioli filled with ricotta and spinach, and Tagliatelle with a creamy mushroom sauce.
You’ll learn how to make the dough from scratch, how to shape and fill the ravioli, and how to cook sauces that bring out the best in each pasta. To finish, we’ll make Tiramisù, the dolce that feels like a warm embrace from home.
What You’ll Make
Ravioli di ricotta e spinaci con burro e salvia
Soft, delicate pasta filled with creamy ricotta and fresh spinach — a simple combination that carries the soul of Italian cooking. We’ll serve them the traditional way, with burro e salvia
(butter and sage), so the scent of the herbs and the richness of the sauce gently wrap around each raviolo. It’s a dish that feels like home — comforting, honest, and full of small joys.
Tagliatelle ai funghi
Tagliatelle are long ribbons of fresh pasta that catch every bit of sauce — come la vita, che trattiene i momenti belli (like life, holding onto its best moments). The mushroom sauce is earthy and fragrant, made with garlic, olive oil, and a touch of fresh herbs. Together, the pasta and sauce tell a story of simplicity and warmth, like a quiet walk in the woods after the rain.
TiramisĂą
Tiramisù means “pick me up,” and it really does. Layers of savoiardi soaked in strong
espresso, a velvety mascarpone cream, and a light dusting of cocoa — each spoonful is a little moment of happiness. It’s the kind of dessert that brings people together, that makes you smile and say, ancora un po’, per favore — just a little more, please.
